Wholefood Baking by Jude Bleraeu

Wholefood Baking is a cookbook with a difference; it truly explores why wholesome ingredients are important and how you can utilise them in your cooking. Part of Jude Blereau’s philosophy is ‘that there is a valid role for sweetness in a wholesome diet…’. This book sets out to prove the point. Some recipes in the book '…err towards nourishing the body, and some more towards nourishing the soul…'.

The book has a significant amount of content, including:

  • Ingredients and what they do
  • Tools for the wholefood kitchen
  • Becoming a baker – instinct and technique
  • Specialised baking – dairy free, egg free and gluten free
  • Scones and drop scones
  • Biscuits, bars and crackers
  • Muffins
  • Cakes
  • Pastry
  • Custards, creams, icings and spreads
  • Glorious fruit, and
  • Foundations.

Wholefood Baking
covers all bases and for those diligent in following instructions it will provide a whole world of information on baking, and recipes to test your newfound skills.

The ‘Baking Notes’, often found at the beginning of a section, are a fantastic addition and really help to escalate this book above the competition. The advice feels genuine and it is like Jude Blereau is imparting wisdom more so than just providing the reader with a recipe and some general tips like so many cookbooks nowadays do.

This cookbook makes you want to try new techniques with your baking, it is both motivational and inspirational.

It is hard to choose particular recipes that highlight the flavour of the book. However the Banana and Coconut Bread with Passionfruit Icing tickled my tastebuds, as well as the Apple and Pecan Cake with Honey and Cream Cheese Icing.

A guide to baking, recipes, great advice and ingredients breakdowns are all combined in a fabulous way that makes tackling some of the more unusual wholefood ingredients less daunting. And if you get hooked on wholefood ingredients this book will explain how you can convert current recipes in your repertoire to whole ingredients, just be prepared to shop further afield than your local chain supermarket for your ingredients.

Wholefood Baking is hard to ignore. In a saturated market it stands up and gives the purchaser great value for money.

Wholefood Baking  by Jude Blereau is published in Australia by Murdoch Books (Sydney 2013; sc, 280 pp) and retails in Australia for RRP A$45
