Great Australian Beer SpecTAPular - Beef Burger with The Mussel Inn Smoking Swine

Australian and New Zealand craft breweries will join international brewers at the 2013 Great Australasian Beer SpecTAPular to be held at the Royal Exhibition Building in Carlton, Victoria in May. 

Beer and food are natural partners, just as wine and food are, and interest in this natural pairing has been growing significantly over the last few years. But it's not just what you sip that can add some distinct flavours to your dish, it's what you put into it.

Here's a recipe using a beer from New Zealand's Mussel Inn, one of the unique brews to be featured at this year's SpecTapular:



  • 1 onion (diced)
  • Olive oil
  • 1kg premium beef mince
  • 1 pot/1 stubby of The Mussel Inn Smoking Swine (or any Rauchbier – which is a German name for a beer with a distinctive smoked flavour)
  • 2 tsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 1 egg
  • 2 tbsp tomato ketchup
  • Salt and pepper 


  1. Sweat the onion in oil until translucent.
  2. Add beer and reduce until sticky. Take off heat and cool.
  3. In a bowl mix the beef mince, mustard, sauce, egg, ketchup and sticky beer and onion mixture. Season well.
  4. Form into patties and chill in fridge for min 30 minutes.
  5. Cook on a hot grill or pan until desired cooking degree.
  6. Enjoy on a fresh bun with condiments and cheese.
