Savour Tasmania 2014 - Chef Jesse Gerner

Over five May days, Savour Tasmania brings together acclaimed chefs from around the world and around Australia and gives them premium Tasmanian produce and beverages and inspiration to create some magical culinary experiences. Jesse Gerner is bring his love of charcoal grills and spit-roasting to the opening night cocktail party and roast pork event.

Jesse Gerner began his apprenticeship early at 15 after always being very keen to cook professionally.  He started and finished his apprenticeship in Adelaide at The Eagle on the Hill, The Oxford and The Lion. After qualifying Jesse moved to Newcastle and worked as a sous chef for Michael Carroll (Ex.  Bon Ricordo head chef, Sydney), at his restaurant – Carroll’s on King.

Jesse started his own 120 seat café near the beach called Grind Coffee Co. and was instantly successful and open seven days a week and after two and a half years Jesse and his wifeworked and ate their way around Europe for six months.

Returning to London Jesse worked at Moro and this is where he fell in love with Spanish and Muslim Mediterranean flavours. Jesse also worked with Rose Gray at The River Café (1 Michelin Star), where sourcing the best ingredients is paramount.

Upon returning to Australia Jesse decided that Melbourne was the place to be and after a quick stint at Movida, he ran Añadafor three years before jealously eyeing off larger kitchens and opened The Aylesbury Restaurant and Rooftop in 2011.

After two years of nose to tail eating at The Aylesbury it was time for a revamp and a return to his Spanish roots with the launch of Bomba Tapas Bar and Rooftop which opened in late September 2013.

Bomba is a Spanish workers bar (bodega) where the tapas menu is designed to share. Bomba is committed to local, fresh seasonal food with simple but well executed flavorsome tapas for city workers and food lovers alike.

Jesse’s interest in food stems from his parents who have always lived quite sustainably, growing their own fruit and vegetables, having chickens, geese, etc. and whilst his food philosophy has matured and changed over the years, the constant has always been using fantastic ingredients that are celebrated for their unique flavour on the plate.

Jesse loves working with charcoal and is really interested in larger joints and whole animals. Spit roasting is one of his favourite methods of cooking meat and he has incorporated charcoal grills in his restaurants.
