There's a shed, set amongst apple trees, overlooking the tranquil waters of the Huon River in southern Tasmania. At first glance you might think it's just another apple shed, after all that's what this Valley is renowned for. But the odd escaping wisps of smoke and a scent that suddenly makes your mouth water reveal that there's more than stored fruit going on.

In 2004, after becoming a Smokemaster, Roger Scales built the Woodbridge Smokehouse to produce European inspired, traditionally smoked goods, using only the finest and freshest seafood available. In the years since, he and his team have refined their craft and today the A Grade trout and salmon from specialty farms are sent to discerning restaurateurs and consumers around the world and winning prizes at fine food shows. For locals and visitors to Tasmanian, deliciousness is also available at the Salamanca Market and the Smokehouse door in the beautiful Huon Valley.

The Atlantic Salmon comes from nearby, where the Huon River meets the Southern Ocean, and the Ocean Trout from Tasmania's wild West Coast. As an order is received, the deft handiwork begins as every part of the process really is done by hand – the washing, filleting, brining, smoking and slicing.

Apple tree prunings are used in the smoke mix and add yet another layer of flavour complexity, and another local twist.

In the north east of the island state, Pipers Brook has been producing exceptional cool-climate wines since 1974. The unique geography, temperate climate and proximity to the Bass Straight all add Tasmania's renowned purity to the award-winning wines of Pipers Brook, Ninth Island and Kreglinger Estate.

Pipers Brook Vineyard, rated 5 stars in the 2017 Halliday Wine Companion, offers visitors the chance to taste the estate grown wines at the cellar door along with delicious local fare served up by chef  April.
